Kambing Madbi bersama salad Basmati, di hidangkan bersama salad Lubnan musim panas oleh Chef Ammar









Bahan-bahannya

1. Bahukambing 1 kg
2. Garam 2 bag(2kg)
3. Rempah Arab 1 sudukecil
4. Ladahitam ½ sudukecil
5. Serbukkunyit ½ sudukecil
6. Minyaksapi 4 sudumakan
7. Kayumanis 2 batang
8. Daun bay 3 helai
9. Buahpelaga 10 biji
10. Bungacengkih 10 biji
11. Saffron 1 sudukecil
12. Bawangmerah 1 biji
13. Ladabesarhijau 1 biji
14. Tomato 2 biji
15. Beras basmati 3 cawan
16. Air 4 ½ cawan

Method of Making
1. In a deep saucepan thick base place the salt on the base form layer till ½ .
2. The Mix Spices , pepper and turmeric sprinkle on the meat and make sure it is covered with the spices
3. Place the Meat on the Salt in the form of single layer without staring the meat on the salt after that adds some salt on the meat, Cover the pan with the lead. On the fire under Medium Heat and cook the meat for about 50-70 minutes until the meat is tender.
4. Another Pot place the Ghee. Over medium heat add the Cinnamon Stick, bay leaf, cardamom and Cloves. By using the wooden spoon stir until the fragment come up then add the saffron
5. Add the onions, peppers and tomatoes till they are soft in texture and aroma comes up
6. Wash rice several times and then drain the water and dry it ( can be some in advance)
7. Stir in salt and water mixture, onion and spices. Add the water then let it boil under strong fire then add the Rice. Let the Rice Boil till the water is lesser then reduce the fire to slow and cook the rithe for about 30-40 minutes.
8. Using fork or sukasukahati and then pour in the rice in a Talam. Get out pieces of meat from salty Pot on the rice and ready to eat.

Lubnan Salad
Bahan-bahannya
1. Bawangbesar 1 biji
2. Timun 3 biji
3. Ladabesarmerah,hijaudankuning ½ setiapbiji
4. Tomato 3 biji
5. Kurma 7 biji
6. Salad campur ½ paket
7. Jus lemon 2 biji
8. Minyakzaitun 250 ml
9. Garamsecukup rasa

Method of Making the Lebanese Summer Salad
Dressing
4. Olive Oil 250 ML
5. Lemon Juice 2 Numbers
6. Salt To Taste

Method of Making
1. Dice the Tomato to a Small Cubs
2. Dice the Onion to a Small Cubs
3. Dice the Cucumber to a Small Cubs
4. Dice the 3 Color Capsicum in to small dice
5. Chopped the Dates (Kurma)
6. Add the Ready Mix Salad
7. Mix all the above Ingredients
8. Mix the Olive Oil and the Lemon Juice with Salt in a Jar
9. Before 10 minutes all the Dressing on the Salad
10. Add the hard Boiled Egg

Drink Cucumber Celery Drink
Ingredients
1. Cucumber Japanese or Local 3 Numbers
2. Celery 100 grams
3. Ice cube 5 picas per glass
4. Sugar to your teast
Method of Making
In a fruit Juicer juice out the cucumber and celery and place them in the glass with ice and sugar as simple as 123
